Chicken Thigh Without Skin

Description:
A Kashmiri-inspired curry with deep red color and aromatic spices, using juicy chicken thighs.

Ingredients (Serves 4):

  • 500g chicken thighs

  • 2 onions (sliced)

  • 3 tomatoes (pureed)

  • 1 tbsp ginger-garlic paste

  • 1 tsp Kashmiri chili powder

  • 1 tsp turmeric

  • 1 tsp garam masala

  • ½ tsp fennel powder

  • ½ tsp dry ginger powder

  • 3 tbsp mustard oil

Steps:

  1. Heat mustard oil until smoking, cool slightly.

  2. Sauté onions until golden.

  3. Add ginger-garlic paste, spices, and tomatoes. Cook until oil separates.

  4. Add chicken and cook until tender.

Serving Suggestion:
Enjoy with steamed rice or roti.
